Vegetarian Tonight: Mushroom Burgers with Barley

Here’s a new video I made (with the help of film pros Andrew Gauthier and Valerie Temple, and again featuring the music of Sleeping States) in the Vegetarian Tonight series. This time it’s a vegan veggie burger, one of my favorites from Veggie Burgers Every Which Way. The recipe has been written up in a few different places, including the Oregonian’s Food Day and the Ultimate Veggie Burgers website.

  1. Love these videos! Is so helpful to see how you do it. Steaming potatoes is definitely the best way to do it, and I’m really liking those as the binder – excellent! I wish you’d do a video for all your recipes…

  2. I love the flavor. I over pulsed the mushrooms, so not very coarse. Even after the oven, they didn’t really firm up. My husband was hoping for a firmer texture. Any suggestions? Will definitely make them again! Thanks for the recipe.
