The Pad Thai in Vegetarian Entrees that Won’t Leave You Hungry is a recipe I make all the time, and recently I adapted it a bit for the Roasted Winter Vegetable Fried Rice. Stock up on rice noodles—they’re cheapest and sold most readily in Chinatown—and then you’ll be all set to make this whenever you get the hankering.

Nicely done, Lukas! Made a quick stir fry with chow mein noodles & mock duck, Savoy cabbage & carrots last night that was very tasty indeed!
This sounds fantastic: I love the idea of cooking the noodles in the sauce alone, more or less. They must get so flavorful!
My squeeze is crazy for pad thai and I keep threatening to make it for him, but getting intimidated. This might be the last push I need to get movin’ on dinner!
I do think it’s a good method for pad thai—I make it all the time. And there’s a bunch of room for experimentation.
